Beech Mushroom and Avocado Salad is a refreshing and nutritious dish that combines the earthy flavor of beech mushrooms with the creamy texture of avocado.

For the Salad:
1 cup beech mushrooms, cleaned and trimmed
2 teaspoons olive oil

4 cups mixed salad greens (arugula, spinach, or your choice)
1 ripe avocado, sliced
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled (optional)
1 tablespoon pumpkin seeds or sunflower seeds (optional)
For the Dressing:
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced

Step 1: Sauté the Beech Mushrooms
